mechanically separated chicken means the chicken has been stripped off the bone by a machine. this is much more efficient than other alternatives, but it also means pieces of bone sometimes get stripped off and mixed in, too, and so mechanically separated chicken isn't necessarily the purest or healthiest form of the meat.
